Pot of Gold Popcorn Salad


Popcorn Salad

I was looking at a Snowbird publication online (http://snowbirdsgulfcoast.com/magazine/sbgc_0313.pdf)

the other day and saw a recipe for Popcorn Salad.  Of course I thought “What? Yuk”.  Well I kept thinking about this bazaar recipe and just had to give it a try.

 

Here’s the posted recipe:

 Oh No Popcorn Salad

Ingredients

2 – 6 oz. bags of Orville Redenbacker Gourmet Tender

White Popping Corn), Remove any kernels

6 oz. can of water chestnuts, drained and chopped

½ cup chopped green onion

2 cups celery

½ cup bacon bits

2 cups shredded cheddar cheese

Dressing

2 cups Hellman’s mayonnaise, 2/3 cup sugar, 3

tablespoons white vinegar

Method

Mix dressing in a medium bowl and set aside. Combine

water chestnuts, green onion, bacon, celery and

cheddar cheese in a large bowl. Add dressing and mix

well. Set in refrigerator to cool. When ready to serve,

pour the popcorn in a large bowl (check for kernels) and

stir until completely mixed.

Oh No – It is Popcorn and it is Delicious!

Well I didn’t have all the ingredients listed so I improvised a bit.  I have an air popper so I popped a ¼ cup of popcorn kernels.  While they were popping I mixed two tablespoons Mayo, a bit of shredded parmesan, some dry ranch dressing, a handful of Mexican blend shredded cheese, one celery stick chopped and one cut up Pero Family Farms mini Sweet peppers(if you have never tried these you have got to get some…they are amazing).  Anyway…when the popper stopped I mixed the Mayo mixture with the popcorn, tossed it a bit and gave it a try.  Wow it is good!  I would never have guessed this would work.

It kind of looks like a Pot of Gold(maybe?), so I think it will be perfect for St. Pat’s Day.

I used Caron Yarn Simply Soft (medium 4) Celestial. Love the feel of this yarn but it tends to bunch a bit.

I used 3 strands ( Red Heart Worsted weight Gold, Green, Purple  for this one  and the N(9.00mm) hook.






Third Run at pattern



This time I used a Q hook, chained 66 using purple, green, gold and yellow for a bit more pop with the colors, after foundation chain continued with pattern only using one strand on each round for three rounds(green, gold, purple). I just dropped the colors not being used for each round, I did not fasten off . Last round using all four strands single crocheted around and joined. The tension was really loose for this because I wanted a light weight cowl. It is kind of warm in Alabama.
